200gm Large Spiral pasta
2 tablespoons olive oil
200gm streaky bacon rashers, roughly chopped
150gm Cotterill & Rouse Marinated & Sliced Sun-Dried Tomatoes, drained
4 canned artichokes, drained and sliced
2 avocados, sliced
100gm feta cheese, cubed
1 handful fresh basil leaves
Place at least 3 litres of water in a large pot and bring to the boil. Add the past and simmer for 8 minutes or until just tender. Drain and transfer to a large mixing bowl.
Meanwhile, heat the oil in a large frying pan until it just begins to smoke. Add the bacon and fry until crispy. Add the sliced artichokes and sun-dried tomatoes, toss until heated through.
Add the bacon mixture and avocado slices to the pasta and mix gently with a large metal spoon to combine.
Spoon the pasta into 4 warm bowls and crumble over the feta.
Coarsely slice the basil and sprinkle over.
Serve immediately with salad greens lightly coated in Cotterill & Rouse 99% Oil Free Balsamic Dressing.
